Sjømanns brød - seaman's bread

Når vi bodd i Kiel var vi ganske ofte i Heikendorf. Så var det klar at jeg vil bake brøden fra der som er i ny boka mi.

As we lived in Kiel, we were quite often in Heikendorf. So it was clear that I would try the recipe of my new book from there.

Sjømanns brød. I oppskriften var det 300g surdeig på 2kg mel og 42g Hefe, jeg har brukt mer surdeig og ingen tilsatt gjær. Litt tett, men ganske bra. Hvis jeg lage den en annen gang, vil jeg bruke enda litt mer surdeig.

Seaman's bread. According to th recipe I should use 300g sour dough  on 2 kg flour and 42g yeast. I used more sour dough and no additional yeast. It still became a bit tight, but ok. If I am gonna make it another time, I will use even more sour dough.
